Clean and wash the vegetables. Finely slice the carrots. Cut leek into thin strips. Steam carrot slices in a little salt water for about 10 minutes. Add the leek strips 5 minutes before the end of the cooking time. Remove the vegetables from the water and let them cool down.
Cut ham into cubes and mix with carrots and leek. Pour into a bowl. For the marinade, mix vinegar with salt, pepper and sugar. Whip the oil into it and season to taste again. Pour the marinade over the ham salad and let it stand for 1 hour. Serve sprinkled with coarsely ground pepper
