Boiled lobster

  • 7-10 Tbsp Salt
  • 1 collar Soup Greens
  • 1 collar Dill
  • 1 TEASPOON black peppercorns
  • 1 Crawfish

Directions

    In a large saucepan, boil plenty of salted water (the saucepan must be large enough to allow the lobster to cook covered with water). Meanwhile clean, wash and coarsely chop the soup greens.

    Wash dill. Add soup greens, dill and peppercorns to the water. Place the lobster head first in the bubbling water. Let it simmer at low heat in a closed pot for about 20 minutes. Drain, unscrew tail and legs and remove meat from the shell.

    A fine aioli with crispy baguette and fresh salad tastes very good with it.
