Bean salad with bacon marinade

Ingredients

Servings: 4
  • 500 g green beans
  • 250 g Cutting beans
  • 7-10 Tbsp salt, white pepper
  • 2 medium-sized onions
  • 75-100 g streaky smoked bacon
  • 200 g cherry tomatoes or small tomatoes (red and yellow)
  • 1 collar Parsley
  • 4 TABLESPOONS oil, 4-5 tablespoons wine vinegar

Directions

    Clean the beans, wash them. Break the green beans into pieces, cut the string beans into pieces. Cook both in strongly salted water for about 15 minutes. Drain, quench and let drain

    Peel and chop the onions. Dice the bacon as well. Wash and halve the tomatoes. Wash and chop parsley

    Heat the oil. Fry the bacon until crispy. Sauté onions briefly. Deglaze with vinegar and 5-7 tablespoons of water. Mix with beans, tomatoes and parsley. Season with salt and pepper. Leave to stand for about 30 minutes. Season to taste again

    Drink: cool cider
