Peel and finely dice the onion. Mix vinegar, mustard and honey. Add 3 tablespoons of oil and season to taste with salt and pepper. Clean and peel the turnip and carrots and cut them into sticks.
Heat 1 tablespoon of oil, add vegetables and fry for approx. 5 minutes, turning. Deglaze with approx. 1/3 of the finished dressing and allow to cool. Clean, wash, spin dry and chop the salad.
Arrange the salad, strips of vegetables, turkey breast and remaining dressing on a plate. Fried slices of bread taste good with it.
