Potato and meat salad

Ingredients

Servings: 8
  • 1 kg waxy potatoes
  • 1/8 l Vegetable broth (instant)
  • 1 collar Chives
  • 1 collar Parsley
  • 1 collar Radishes
  • 4 Gherkins (from the jar)
  • 500 g Meat salad
  • 200 g Skimmed milk yoghurt
  • 2-3 TABLESPOONS Horseradish (from the jar)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Sugar

Directions

    Wash the potatoes, bring to the boil covered with water and cook for about 20 minutes. Drain potatoes, quench, peel and let cool down a little. Bring the stock to the boil. Cut potatoes into pieces.

    Pour broth over it and let it soak for about 15 minutes. Wash the chives and parsley, dab dry. Chop the parsley, cut the chives into small rolls. Wash and clean the radishes and, except for one for garnishing, cut them into slices.

    Cut the cucumbers into thin slices. Mix meat salad, yoghurt and horseradish. Season with salt, pepper and sugar. Mix potatoes, radishes, cucumber and meat salad. Fold in the herbs and let it soak well.

    Season again. Pour the potato and meat salad into a large bowl and garnish with radishes.
