Cook the tortellini in boiling salted water for about 15 minutes. Pour onto a sieve, quench cold and drain. In the meantime clean and wash spring onions and cut them into fine rings.
Clean, wash and chop the peppers. Clean, wash, drain and cut the salad into strips. Clean, wash, seed and finely dice the tomato. Peel garlic and chop finely. Pour the peeled tomatoes onto a sieve and let them drain, collecting the tomato juice.
Mix vinegar, salt, pepper, paprika and sugar. Stir in tomato juice and add oil. Dice peeled tomatoes and stir into the marinade. Crumble cheese. Mix tortellini, spring onions, salad and paprika.
Pour tomato marinade over it and let it steep a little. Arrange the salad on a plate with the tomato cubes and serve sprinkled with cheese. Garnish with parsley if desired.
