Sort the spinach, wash and shake dry. Peel onion and garlic and dice finely. Melt the fat in a pot. Sauté onion and garlic for about 4 minutes. Add the spinach and let it collapse in a closed pot. Season to taste with salt and nutmeg
Cover the bread with cheese and bake in a preheated oven (electric cooker: 225 °C/ circulating air: 200 °C/ gas: see manufacturer) for approx. 5 minutes. Wash parsley, shake dry, pluck leaves from the stalks and chop finely
Divide the spinach into small ramekins, beat 1 egg on each and cook in a preheated oven (electric cooker: 150 °C/ convection oven: 125 °C/ gas: see manufacturer) for approx. 10 minutes. Season with salt and pepper. Sprinkle bread with pepper and parsley
