Baked beans in tomato sauce

Ingredients

  • 250 g dried large white beans
  • 2 Onions
  • 2 Garlic cloves
  • 2 TABLESPOONS Olive oil
  • 2 can(s) (425 ml each) chunky tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1/2 bunch flat leaf parsley
  • 150 g Feta cheese

Directions

    Wash the beans and soak in 1 litre of water overnight. Put the beans in a pot with the soaking water. Fill up with water until the beans are well covered. Bring to the boil and simmer for about 1 1/2 hours. Peel onions and garlic and dice finely.

    Heat the oil in a pot. Sauté onions and garlic until translucent. Deglaze with tomatoes and simmer covered for about 5 minutes. Drain the beans and let them drain. Season tomato sauce with salt, pepper and sugar. Add the beans and simmer for about 10 minutes. In the meantime wash parsley, dab dry, pluck leaves from the stalks and cut into strips. Add the parsley to the beans, except for a little bit for sprinkling, and season again. Put the beans into one large or 4 small ovenproof moulds. Crumble the cheese and spread it on the beans.

Remove and sprinkle with parsley. Delicious with flat bread
