For the batter, mix egg, flour, milk and apple juice until smooth. Season with 2 tablespoons of sugar and salt. For the sauce, mix quark, coconut milk and 2 tablespoons of sugar. Peel bananas, cut them diagonally into long slices. Pull banana slices through the batter and bake in portions in approx. 170 °C hot fat.
Roll the finished bananas in 4 tbsp. sugar. Arrange bananas and cream on plates. Sprinkle with coconut chips and decorate with mint
