Bagels with scrambled eggs, salmon and bacon

Ingredients

Servings: 4
  • 1 Organic Lemon
  • 8 stalks of chives
  • 2 discs Smoked salmon
  • 4 discs Bacon
  • 8 Eggs (size M)
  • 25 g Fresh cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Bagels (different varieties)

Directions

    Wash the lemon and grate dry. Cut 2 thin slices from the middle. Cut the slices in half again. Use the rest of the lemon for other purposes. Wash the chives, shake dry and cut the lower half of the stalks into small rolls. Cut salmon into strips

    Halve the slices of bacon and put them into a warm coated pan. Heat the pan and fry until crispy, turning. Remove from the pan and drain on kitchen paper. Whisk eggs, chives and crème fraîche in a bowl, season with salt and pepper. Pour the eggs into the bacon pan and let them set while stirring several times

    Remove the pan from the stove. Cut the bagels in half lengthwise. Spread the scrambled eggs over the halves. Put the bacon slices in 4 halves. Cover the other 4 halves with strips of salmon and garnish with chives and lemon. Serve immediately
