Cress scrambled eggs with dried tomatoes

Ingredients

Servings: 4
  • 75 g dried soft tomatoes
  • 8 Eggs (size M)
  • 100 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 Beet Cress
  • 1 TABLESPOON Oil
  • 15 g Herb Butter
  • 4 discs Wholemeal bread

Directions

    Chop the tomatoes into small pieces. Whisk eggs and cream, season with salt and pepper. Add the tomatoes. Cut cress from the bed.

    Heat the oil in a frying pan. Stir the eggs in the oil slowly and allow to set. Sprinkle the scrambled eggs with cress and serve with herb butter and wholemeal bread.
