Bacon rissoles with bean vegetables

Ingredients

Servings: 4
  • 375 g runner beans
  • 1 Bread roll (from the previous day)
  • 6 Onions
  • 100 g streaky bacon
  • 750 g mixed minced meat
  • 1 Egg
  • 1 TEASPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 4 Tomatoes
  • 1 collar Parsley
  • 1 package (300 g) frozen broad beans
  • 2 TABLESPOONS Oil
  • 20 g Butter

Directions

    Clean and wash the beans. Soak rolls in cold water. Peel and finely dice onions. Finely dice the bacon. Knead minced meat, egg, diced onions, half of the diced bacon and mustard with the dough hook of the hand mixer.

    Season with salt, pepper and paprika. Cut 3 onions into slices, cut remaining onions into rings. Clean, wash and slice the tomatoes. Wash parsley, dab dry and chop finely, except for a few leaves for garnishing. Cook French beans and broad beans in boiling salted water for about 18 minutes. In the meantime, shape the minced meat into 8 meatballs, heat the oil in a pan and fry the meatballs one after the other. Drain fat in a pan, sauté onions and tomatoes in it and sprinkle with parsley. Drain the beans, let them drain and fold them into the tomato vegetables. Keep the meatballs warm, fry the remaining diced bacon and onion rings in the frying fat of the meatballs.

    In the meantime, shape the minced meat into 8 meatballs, heat the oil in a pan and fry the meatballs one after the other. Drain fat in a pan, sauté onions and tomatoes in it and sprinkle with parsley. Drain the beans, let them drain and fold them into the tomato vegetables. Keep the meatballs warm, fry the remaining diced bacon and onion rings in the frying fat of the meatballs. Arrange vegetables and meatballs on a plate, sprinkle with onion rings and bacon and garnish with the parsley leaves. Fried potatoes taste good with it
