Ingredients

Servings: 4
  • 800 g new potatoes
  • 7-10 Tbsp Salt
  • 500 g Broccoli
  • 1 TABLESPOON clarified butter
  • 1 (approx. 400 g) Pork tenderloin
  • 7-10 Tbsp Pepper
  • 125 g Bacon
  • 1 Garlic clove
  • 1 untreated lemon
  • 1/2 bunch Parsley
  • 4 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the potatoes thoroughly and cook them covered in little boiling salted water for about 15 minutes. Clean and wash broccoli and cut into florets. Heat clarified butter and fry the pork tenderloin in it all around. Season with salt and pepper and continue to fry for about 12 minutes. Drain the potatoes and wrap them with bacon slices.

    Steam broccoli covered in a little salted water for about 10 minutes. Take the fillet out of the pan, wrap in aluminium foil and let it rest. Fry potatoes in frying fat for about 8 minutes. Peel garlic and cut into fine slices. Wash lemon thoroughly and rub dry. Grate lemon peel. Cut lemon into thin slices. Wash parsley, dab dry and chop finely. Remove potatoes from the pan and keep warm. Sauté garlic in frying fat.

    Drain the broccoli. Cut the fillet into slices. Arrange potatoes, fillet slices and broccoli on plates. Pour browned breadcrumbs over the broccoli
