Avocado with rocket-mortadella salad

Ingredients

  • 1 Garlic clove
  • 2-3 TABLESPOONS Lemon juice
  • 1 pinch Sugar
  • 7-10 Tbsp salt, white pepper
  • 1 TABLESPOON Olive oil
  • 125 g Mozzarella cheese
  • 75 g Mortadella cold cuts in thin slices
  • 3 medium-sized tomatoes
  • 50 g Arugula (rocket)
  • 2 ripe avocados (about 200 g each)

Directions

    Peel and finely chop the garlic. Season with 1 tablespoon lemon juice, sugar, salt and pepper. Beat the oil into it

    Drain and dice the mozzarella. Cut mortadella into strips. Wash, quarter, seed and finely dice the tomatoes. Wash and shake the arugula dry and, except for a few leaves for garnishing, cut coarsely. Mix everything loosely with the marinade

    Halve the avocados and remove the stones. Sprinkle the remaining lemon juice on the cut surfaces. Fill each avocado half with some lettuce. Arrange on remaining rocket salad and add the rest of the salad. Ciabatta goes well with this

    Avocado flesh quickly turns brown. Therefore, only cut open shortly before serving, sprinkle with lemon and fill. But you can prepare the salad well
