Halve the avocado. Remove seeds and peel the fruit halves. Cut the fruit flesh into thin slices. Wash and quarter apples. Remove the seeds. Cut apples into pieces. Peel grapefruit thickly so that the white skin is completely removed. Use a knife to remove the fillets from the parting skins. Clean and wash spring onions and cut them into pieces. Chop pumpkin seeds. Mix yoghurt, crème fraîche, grated lemon peel, lemon juice and honey. Season with salt and pepper. Spread the salad ingredients on 4 plates. Sprinkle with chopped pumpkin seeds. Pour sauce over them. Garnish with grated lemon
