Let the beans swell in 2 litres of water for about 12 hours. Then bring to the boil with the soaking water and cook until soft for about 1 1/2 hours. In the meantime, wash the tomatoes, carve the skin crosswise and place in boiling water for about 20 seconds. Rinse in cold water, drain and skin. Dice the tomatoes. Peel garlic and chop finely.
Wash sage, dab dry, chop coarsely if necessary. Drain the beans, let them drain. Heat oil in a pot. Brown garlic and sage in it. Add the beans and tomatoes and cook for about 20 minutes, stirring occasionally. Season with salt and pepper
