Cook the pasta in boiling salted water for 8-10 minutes. In the meantime, mix vinegar, salt, pepper and sugar and add oil. Clean and wash the cabbage, cut into fine strips and pour the vinegar-oil vinaigrette over it.
Clean and wash the radicchio, put a few leaves aside for serving and cut the remaining leaves into fine strips. Dice the smoked pork loin. Pour the pasta onto a sieve, quench and drain.
Clean, wash and thinly slice the zucchini. Wash parsley, dab dry and put a leaf aside for garnishing. Finely chop the rest. Mix pasta, cabbage, radicchio, smoked pork loin and courgette, arrange on a plate with the radicchio leaves set aside, add dressing, serve sprinkled with coloured pepper and chopped parsley.
Garnish as desired with parsley leaf.
