Ingredients

Servings: 4
  • 300 g leaf spinach
  • 150 g cherry tomatoes
  • 1 (150 g) Mug Mini-Mozzarella balls
  • 2 Spring onions
  • 4 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Olive oil
  • 30 g Pine nuts

Directions

    Clean, wash and drain the spinach. Wash and halve the tomatoes. Drain the mozzarella. Clean and wash spring onions and cut into fine rings. Mix vinegar, salt, pepper and sugar. Fold in the oil.

    Fold in spring onions. Roast the pine nuts in a pan without fat, remove. Arrange spinach, tomatoes and mozzarella on plates. Pour the spring onion vinaigrette over the salad. Sprinkle with pine nuts. Serve with baguette
