Austrian fried potatoes

Ingredients

Servings: 4
  • 1 kg baby potatoes
  • 7-10 Tbsp Salt
  • 1 (approx. 500 g) small Hokkaido pumpkin or 300 g pumpkin flesh (any kind)
  • 3 TABLESPOONS Oil
  • 200 g Mushrooms
  • 200 g Meatloaf
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 2-3 TEASPOONS Pumpkin seed oil

Directions

    Scrub potatoes thoroughly and boil in salted water for 15-20 minutes. Briefly rinse the potatoes in cold water and peel them. Wash the pumpkin, cut in half and remove the seeds. Cut pumpkin into cubes (1 cm x 1 cm).

    Heat 2 tablespoons of oil in a large pan and fry the pumpkin cubes for about 6 minutes at medium heat. Clean the mushrooms, wash and halve them. Add the mushrooms to the pumpkin after about 2 minutes. Cut meatloaf into strips.

    Remove the pumpkin and mushrooms from the pan. Heat 1 tablespoon of oil in the pan. Fry the potatoes and strips of meat cheese until golden brown. Fry the pumpkin seeds the last minute. Add pumpkin cubes and mushrooms and season everything with salt, pepper and a little paprika powder.

    Arrange potatoes and sprinkle with pumpkin seed oil before serving.
