Wash and clean the aubergines and cut them in half lengthwise. Cut each half several times lengthwise and place them fan-shaped on an oiled baking tray. Wash, clean, quarter and seed the tomatoes. Cut the flesh into cubes. Crumble cheese.
Sprinkle tomatoes and cheese over the eggplant fans. Season with salt, pepper and herbs. Drizzle with some olive oil and bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 20 minutes. Sprinkle with the remaining oil in between
