Wash the asparagus, peel and cut off the woody ends. Season salt water with sugar and lemon juice, bring to the boil, add asparagus and cook for about 15 minutes
Clean and wash the radishes and cut them into fine sticks. Wash chives, shake dry and cut into fine rolls. Whisk vinegar, salt, pepper, mustard and honey. Add oil drop by drop. Stir radishes and chives into the vinaigrette. Cut salmon into strips
Arrange asparagus and salmon on a plate and sprinkle with vinaigrette
