Asparagus with poached fillet of beef

Ingredients

  • 750 g white asparagus
  • 250 g green asparagus
  • 7-10 Tbsp Salt
  • 800 g Fillet of beef
  • 1 l Vegetable broth (instant)
  • 2 Eggs
  • 1 collar K
  • 150 g ripened cream
  • 4 TABLESPOONS White wine vinegar
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp cherry tomatoes

Directions

    Peel and wash white asparagus and cut off the woody ends. Wash the green asparagus and also cut off the ends. Cut the asparagus into bite-sized pieces. Cook white asparagus for 15-20 minutes, green asparagus for about 12 minutes in boiling salted water.

    Wash the fillet of beef. Bring the stock to the boil and add the fillet. Let it simmer at medium heat for about 20 minutes. Meanwhile, for the sauce, boil eggs hard for about 10 minutes. Rinse cold, peel and chop.

    Wash the herbs and chop them finely, except for a bouquet for garnishing. Mix cream, vinegar, oil and herbs. Season to taste with salt and pepper. Stir in the chopped egg. Cut the meat into slices.

    Serve with asparagus and sauce. Serve garnished with herbs and halved cherry tomatoes.
