Asparagus pizza with Parma ham

Ingredients

  • 1/2 cube (21 g) Yeast
  • 400 g Flour
  • 7-10 Tbsp Salt
  • 7-10 Tbsp dried oregano
  • 7 TABLESPOONS Olive oil
  • 300 g green and white asparagus
  • 1 Garlic clove
  • 1 (80 g) Onion
  • 2 TABLESPOONS Tomato paste
  • 300 g strained tomatoes
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 100 g Parma ham in slices
  • 150 g Goat cheese
  • 7-10 Tbsp Oregano
  • 7-10 Tbsp Flour
  • baking paper

Directions

    For the dough, dissolve yeast in 250 ml lukewarm water. Mix flour, 2 teaspoons of salt and oregano. Add 6 tablespoons of oil and mix with the dough hook of the hand mixer, letting the yeast water run in. Knead everything into a smooth dough. Cover and leave to rise in a warm place for about 40 minutes. Meanwhile wash the asparagus and cut off the woody ends.

    Peel the white asparagus. Cook the asparagus in a pot of boiling salted water for about 10 minutes. Remove the green asparagus after about 5 minutes. Quench the asparagus cold. Meanwhile peel garlic and chop finely. Peel and chop the onion. Heat 1 tablespoon of olive oil in a saucepan. Fry the diced onion for about 2 minutes. Add tomato paste and garlic, fry briefly and deglaze with strained tomatoes. Simmer for about 2 minutes, season to taste with salt, pepper and sugar. Cut ham into strips. Cut the dough in half.

    Heat 1 tablespoon of olive oil in a saucepan. Fry the diced onion for about 2 minutes. Add tomato paste and garlic, fry briefly and deglaze with strained tomatoes. Simmer for about 2 minutes, season to taste with salt, pepper and sugar. Cut ham into strips. Cut the dough in half. Roll out each half round (22-24 cm Ø) on a floured work surface and place on baking trays lined with baking paper. Cut asparagus in half lengthwise. Spread pizzas with tomato sauce, cover with asparagus and ham strips. Finely pluck the cheese and spread on the pizzas. Bake the pizzas one after the other in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 15 minutes on the bottom shelf. Cut the pizzas into pieces and garnish with oregano

Spread pizzas with tomato sauce, cover with asparagus and ham strips. Finely pluck the cheese and spread on the pizzas.
