Asparagus dish à la Bolognese

Ingredients

  • 800 g small new potatoes
  • 50 g grated parmesan cheese
  • 1 kg white asparagus
  • 7-10 Tbsp Salt
  • 1 Onion
  • 2 Carrots
  • 1 TABLESPOON Oil
  • 500 g mixed minced meat
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Tomato paste
  • 7-10 Tbsp dried basil
  • 7-10 Tbsp Basil

Directions

    Scrub and wash the potatoes thoroughly with a brush. Cut the potatoes several times and place them on a baking tray. Cook in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for approx. 25 minutes.

    Sprinkle with Parmesan cheese 5 minutes before the end of the cooking time. Wash and peel the asparagus and cut off the lower woody ends. Cook the asparagus in boiling salted water for about 15 minutes. Peel and finely chop the onion.

    Peel, wash and dice the carrots. Heat oil in a pan. Fry the minced meat in it until chunky. Add onion and carrots. Season with salt and pepper. Add tomato paste and basil and pour 1/4 litre of water.

    Bring to the boil and reduce to a thick consistency. Arrange asparagus, bolognese and potatoes on plates. Garnish with basil.
