Chicken filet from the oven with bacon apples

Ingredients

Servings: 4
  • 1/2 bunch Thyme
  • 3 Apples (e.g. Elstar; approx. 175 g each)
  • 12 discs Bacon
  • 750 g baby potatoes
  • 4 large chicken fillets (approx. 250 g each)
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 ml Cider
  • 250 ml Chicken broth
  • 7-10 Tbsp Aluminium foil

    Wash the thyme, shake dry. Remove the leaves and chop finely, except for something to garnish. Wash, quarter and core the apples. Wrap each with 1 slice of bacon. Wash potatoes thoroughly and cut in half. Wash the meat and cut each fillet into three pieces

    Heat the oil and fry the bacon apples all around. Take out and fry the meat in hot frying fat while turning. Together with potatoes, thyme and bacon apples, place in a large pan or the fat pan of the oven. Season well with salt and pepper. Pour on the cider and stock, seal everything with aluminium foil and braise in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 25 minutes. Remove aluminium foil and bake open for another 15-20 minutes. Garnish with thyme
