Defrost fish and vegetables at room temperature. Season with salt and pepper. Place the fish and vegetables in an ovenproof dish. Pour in coconut milk.
Cook in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 8 minutes. In the meantime prepare rice according to the instructions on the packet. Arrange rice in a bowl, fish and vegetables on a plate. Sprinkle with Asian spice mixture and garnish with coriander
