Boil 100 ml of salted water. Stir in the couscous, remove from heat, cover and let it swell for about 5 minutes. Loosen up with a fork and let cool down
Wash and halve the cherry tomatoes. Clean, wash and dice the zucchini. Dice the feta cheese as well. Wash parsley, shake dry and cut into strips, except for a little garnish.
Season vinegar with salt, pepper and sugar, fold in oil. Mix the vinaigrette with prepared ingredients and let it steep a little. Season to taste again
