Wash duck breast, dab dry and cut into cubes. Cut the bamboo shoot into as many slices. Wash the chilli, dab dry and cut very finely. Peel and chop the ginger. Mix duck cubes, bamboo shoot, ginger, chili and 100 ml oil. Marinate for 3-4 hours. Take out, put on skewers and deep-fry in hot oil
