Wash and clean the peppers and cut them into rings. Mix sour cream and Sambal Oelek, season with salt. Whisk eggs and soy sauce, season with pepper. Heat the oil in a small pan (approx. 14 cm Ø), add the egg mixture, cover and let it simmer at low heat. In the meantime, wash the herbs and dab dry. Cut chives into small rolls.
Cut the rolls once. Remove the omelette from the pan and divide into 3-4 pieces. Layer the lower half of the roll with pepper rings, ham, coriander and omelette. Add the sour cream. Sprinkle with chives, put the lid of the roll on top
