Chicory and apple salad

Ingredients

  • 2 Chicory (about 300 g)
  • 7-10 Tbsp juice of 1/2 lemon
  • 1 Head Radicchio or Lollo Rosso
  • 1 tablespoon (approx. 25 g) Walnut kernels
  • 1 small onion
  • 2 TABLESPOONS Vinegar (e.g. apple vinegar)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sugar
  • 2-3 TABLESPOONS Oil
  • 2 (approx. 200 g) small apples

Directions

    Clean, wash and slice the chicory. Sprinkle with half the lemon juice. Clean, wash and drain the radicchio. Pluck or cut the leaves into bite-sized pieces

    Coarsely chop the walnuts. Peel and finely chop the onion. Mix vinegar, salt, pepper and sugar. Fold in the oil. Stir the walnuts and diced onion into the marinade

    Wash the apples and remove the cores with an apple corer (or cut the apples into thin slices and sprinkle with the remaining lemon juice

    Arrange apple, chicory and radicchio with the marinade on plates. Wholemeal bread tastes good with it

    Instead of walnuts, sunflower seeds, hazelnuts or peanuts also taste good
