Mini-Rösti with Matjes-Cocktail

Ingredients

Servings: 4
  • 1 Bag (100 g) of 'Röstini' (dry product)
  • 2-3 TABLESPOONS Lemon juice
  • 7-10 Tbsp salt, white pepper
  • 1 pinch sugar, 5-6 tablespoons oil
  • 1 small onion
  • 2-3 Gherkins (glass)
  • 1 (approx. 150 g) small apple
  • 2-3 (approx. 150 g) Matie's fillets
  • 2-3 stem(s) Dill
  • 100 g ripened cream
  • 7-10 Tbsp Lemon wedges and dill

Directions

    Mix 1/4 l cold water and rösti powder well in a mixing bowl. Allow to swell for approx. 10 minutes

    Mix lemon juice, salt, pepper and sugar. Fold in 2 tablespoons of oil

    Peel and finely chop the onion. Cut the cucumber into slices. Wash, quarter, core and slice the apple. Cut matie into small pieces. Wash dill and chop finely. Mix prepared salad ingredients and salad dressing

    Heat 3-4 tablespoons of oil in portions in a frying pan. Add the Röstimasse by the spoonful to the hot oil and fry about 12 small Rösti. Only turn when a golden brown rim has formed. Remove and keep warm

    Spread the Matjes cocktail over the Rösti and serve with a dash of sour cream. Garnish with lemon and dill if desired
