Apples in a dressing gown with cinnamon foam

Ingredients

  • 1 pack of (300 g) deep-frozen puff pastry
  • 5 small, rosy-cheeked apples
  • 7-10 Tbsp Juice of 1 lemon
  • 50 g chopped hazelnuts
  • 1 TABLESPOON Raisins
  • 75 g Sugar
  • 1 knife tip ground
  • 7-10 Tbsp Aniseed
  • 2 TABLESPOONS Rum
  • 1 Egg
  • 3 Egg yolk (size M)
  • 7-10 Tbsp ground cinnamon
  • 150 ml unsweetened apple juice
  • 7-10 Tbsp browse
  • baking paper

Directions

    Spread the puff pastry slices on a work surface and allow to thaw. In the meantime, peel 4 apples, remove the core with an apple cutter and sprinkle the apples with 2 tablespoons of lemon juice.

    Mix chopped nuts, raisins, 1 tablespoon of sugar, aniseed and rum and fill into the apples. Roll out 4 puff pastry sheets into squares (approx. 18x18 cm) on a floured work surface. Place the apples in the middle of each square.

    Separate the egg and brush the edges of the dough with the egg white. Press the dough corners together over the apples so that they are completely covered. Roll out the rest of the pastry sheet and cut out decorations (e.g. small apples and leaves).

    Whisk the egg yolks. Place the apples on a baking tray lined with baking paper and brush all around with egg yolk. Put some decorations on top, press them down a little and put the rest of the decorations on the baking tray.

    Coat the ornaments with egg yolk as well. Bake in the preheated oven (electric: 200 ° C / gas: level 3) for about 30 minutes. Remove small extra decorations from the oven after about 15 minutes.

    Wash the rest of the apple, quarter it and cut it into narrow slices. Bring the rest of the lemon juice and 1/8 litre water to the boil, add the apple slices and cook over a low heat for about 5 minutes. Put egg yolk, remaining sugar, 2 teaspoons of cinnamon and apple juice in a heat-resistant bowl.

    Whisk with a whisk over a hot water bath until thick and season to taste. Arrange apples in the dough with the cinnamon foam on plates. Drain the apple slices. Decorate plates with the slices and dough decorations.

    Dust with a little cinnamon and serve decorated with leaves.
