Ingredients

  • 1/4 l Milk
  • 1 Vanilla pod
  • 40 g Sugar
  • 2 Egg yolk (size M)
  • 10 g Cornstarch
  • 1 egg (size M)
  • 80 g Flour
  • 50 ml dry white wine
  • 3 TABLESPOONS Milk
  • 1 pinch Salt
  • 30 g Sugar
  • 2 medium-sized apples
  • 7-10 Tbsp juice of 1/2 lemon
  • 7-10 Tbsp Icing sugar and cinnamon
  • 7-10 Tbsp Oil
  • 7-10 Tbsp Mint

Directions

    For the sauce, cut open the vanilla pod and scrape out the pulp. Boil up the milk, except for 3 tablespoons, vanilla pulp and sugar. Stir the egg yolks, starch and remaining milk until smooth and stir into the hot milk until some binding occurs (do not let it boil any more). Let the sauce cool down, stirring from time to time. Separate the eggs for the dough.

    Mix egg yolk, flour, wine, milk, salt and sugar. Beat egg whites until stiff and fold into the dough. Peel apples and cut out the core. Cut apples into 12 slices and sprinkle with lemon juice. Turn the apple slices in the dough and fry in hot oil until golden brown. Drain on kitchen paper. Arrange apple tartlets with some sauce on plates. Dust with cinnamon and sugar. Decorate with mint.
