Apple-fennel salad with sprouts

Ingredients

  • 2-3 TABLESPOONS Cider vinegar
  • 7-10 Tbsp salt, pepper, sugar
  • 3-4 Tbsp Oil (e.g. walnut oil)
  • 1 Onion
  • 1 (approx. 250 g) Fennel Tuber
  • 1 medium-sized carrot
  • 3 (approx. 500 g) sour apples
  • 3-4 Tbsp Lemon juice
  • 50 g Radish sprouts
  • 50 g Lamb's lettuce
  • 50 g ComtĂ© or Gouda

    Mix vinegar, salt, pepper and 1 pinch of sugar. Fold in the oil. Peel onion, dice finely and stir in

    Clean, wash and slice the fennel finely. Peel and wash the carrot and slice or grate it into fine sticks. Wash and halve apples. Possibly cut 4 thin slices from the middle for garnishing. Cut apples into quarters, remove seeds and slice or grate them into thin sticks. Sprinkle with lemon juice

    Sort the sprouts, rinse and drain. Clean and wash the salad. Mix prepared salad ingredients and marinade. Use a peeler to slice the cheese into fine shavings and sprinkle on top. Arrange and garnish with apple slices
