Ingredients

  • 100 g Butter or margarine
  • 150-200 g demerara sugar
  • 4 Eggs (size M)
  • 7-10 Tbsp scraped pulp from 1 vanilla pod
  • 400 g Wholemeal wheat flour
  • 1 package Baking Powder
  • 100 g ground hazelnuts
  • 2 heaped teaspoonful of cinnamon
  • 1 coated Tsp Cardamom, pimento and ground cloves
  • 1 (approx. 250 g) big apple
  • 7-10 Tbsp Lemon juice
  • 7-10 Tbsp Fat and breadcrumbs
  • 7-10 Tbsp Icing sugar and cocoa

Directions

    Cream fat and sugar. Stir in eggs bit by bit. Add vanilla pulp. Mix flour and baking powder and gradually stir into the fat-sugar-egg mixture. Add hazelnuts and spices. Peel the apple and cut out the core. Coarsely grate the apple and sprinkle with lemon juice.

    Add to the dough and mix. Grease a medium sized ring cake tin and sprinkle with breadcrumbs. Pour in the dough and bake in a preheated oven (electric: 175 °C/ gas: level 2) for about 1 hour. Let it cool down a little bit, remove from the rim with a sharp knife and turn out of the tin. Let it cool down well on a cake rack and dust with icing sugar and cocoa. Makes about 12 pieces
