Mix almonds and sugar and grind very finely in the universal chopper. Lightly beat 2 egg whites, gradually adding the almond mixture and bitter almond flavouring until a firm dough is formed.
2 Line a baking tray with baking paper. Use 2 teaspoons to place small heaps on the baking trays. Whisk 1 egg whites and brush the biscuits with them. Sprinkle with sugar. Bake the trays one after the other in a preheated oven (electric cooker: 150 °C/ convection oven: 125 °C/ gas: level 1) for about 25 minutes.
