90° beef rump steak with pineapple salsa

While the steak slumbers in the oven at 90 degrees, we dice chillies, pineapple and peppers for the salsa very finely at a 90 degree angle. If we add lemon couscous with mint, the result is perfectly medium plus exotic-fruity

Ingredients

Servings: 4
  • 1 Garlic clove
  • 4 Rump steaks (à approx. 250 g; room temperature)
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 red pepper
  • 1 Babyananas (ca. 275 g)
  • 1 small red chili pepper
  • 1 red onion
  • 1 Organic Lemon
  • 5 Stem/s Mint
  • 250 g Couscous (instant)

Directions

    Preheat the oven and baking tray (electric oven: 90 °C/circulating air: 70 °C/gas: not suitable). Peel garlic and chop finely. Pat steaks dry. Heat 3 tablespoons of oil in a large pan. Fry the meat in it in portions on each side over high heat for approx. 1 minute. Remove and put the pan aside. Season steaks with salt and pepper. Put the meat thermometer into the side of a steak. Place steaks on a baking tray and cook in a hot oven for approx. 30 minutes until a core temperature of approx. 55 °C (medium) is reached. Heat the pan again and briefly sauté the garlic in it.

    In the meantime clean, wash and finely dice the peppers. Peel and quarter the pineapple, cut out the stalk and finely dice the flesh. Clean the chilli, cut lengthwise, remove seeds, wash and cut into fine rings. Peel and finely dice the onion. Wash and dry the lemon and grate the peel finely. Halve the lemon and squeeze. Wash mint, shake dry, pluck off the leaves and cut into strips.

    Mix paprika, pineapple, chili, onion, lemon peel and half mint. Stir in half lemon juice and 1 tablespoon of oil. Add salt, pepper and 1⁄2 tsp sugar absc

    Good 1⁄4 l Boil up salted water. Stir in the couscous, allow to swell according to instructions on the packet. Loosen couscous with a fork. Stir in 2 tablespoons of oil, steamed garlic, the rest mint and lemon juice. Remove steaks from the oven and serve with salsa and couscous.
