20-minute lemon gnocchi with salmon

Ingredients

Servings: 4
  • 7-10 Tbsp salt, pepper
  • 4 pieces of salmon fillet (approx. 150 g each)
  • 2 TABLESPOONS Oil
  • 1 package (500 g; refrigerated shelf) Gnocchi
  • 200 g Whipped cream
  • 7-10 Tbsp grated rind of 1⁄2 organic lemon
  • 4 Stem(s) Mint
  • 1-2 TABLESPOONS Lemon juice

Directions

    Bring 2 l salted water to the boil. Rinse fish, dab dry. Heat oil in a pan. Fry fish in it for 3-4 minutes on each side. Season with salt and pepper.

    Cook gnocchi in boiling salted water according to package instructions and drain. Add cream and 75 ml water. Season with lemon peel, salt and pepper, bring to the boil and simmer for about 2 minutes.

    Mint wash, chop finely. Stir lemon juice into the gnocchi, season again. Arrange gnocchi and salmon.
