Peel the shallots and cut into slices. Clean and trim the mushrooms and halve them according to size. Wash the meat, dab dry and cut into strips. Heat clarified butter. Fry the meat for about 6 minutes, turning it over and taking it out.
Add the shallots and mushrooms to the cooking fat and fry while turning. Dust with flour and sweat. Deglaze with wine, bring to the boil, add cream. Add meat and simmer for about 10 minutes. Season to taste with salt and pepper.
Arrange the meat on plates. Serve with potato rösti.
