Dice the nougat and melt over a warm water bath. Roast the flaked almonds in a pan without fat until golden brown. Take out and let cool down. Separate the eggs. Beat egg whites and cream separately until stiff. Beat egg yolks, sugar and honey over a hot water bath until foamy. Add nougat, remove from water bath and continue beating until the mixture is cold again. First fold in cream and flaked almonds, then beaten egg whites. Pour into a small box form and freeze for at least 6 hours. To decorate, pull flowers through egg white, turn in sugar and let dry. Form parfait into balls and decorate with sugared flowers
