Clean, wash and cut the zucchini into thin, fine strips. Roast the pine nuts in a pan without fat, take them out. Wash apple, quarter it, remove core. Cut quarter into small cubes.
Wash the lime, grate the peel. Halve lime, squeeze juice. Measure 3 tablespoons and mix with honey and wine vinegar. Fold in the oil. Season to taste with salt and pepper. Stir in pine nuts.
Fold in the apple cubes. Cut the mortadella into strips. Mix zucchini and mortadella. Pour marinade over it. Spread the zucchini salad on plates. Delicious with baguette or ciabatta.
