Yoghurt mousse with strawberries

Ingredients

  • 6 sheets Gelatine
  • 1 untreated lemon
  • 450 g Whole milk yoghurt
  • 170 g + 1 tablespoon of sugar
  • 250 g Whipped cream
  • 1 package Vanillin sugar
  • 2 Protein
  • 250 g Strawberries

Directions

    Soak gelatine in cold water. Wash lemon, grate peel finely, squeeze juice. Mix yoghurt, lemon juice and zest and 120 g sugar so that the sugar dissolves. Squeeze the gelatine, dissolve lukewarm. Stir 2 tablespoons of cream into the gelatine.

    Stir the mixed gelatine into the rest of the cream. Chill until it begins to set. Whip the cream until stiff and allow the vanilla sugar to trickle in. Beat the egg whites until stiff and allow 50 g sugar to trickle in. Continue beating until the sugar has dissolved. Fold the cream and beaten egg white into the gelling cream one after the other. Pour into a bowl and place in the fridge for another 1 hour. In the meantime wash, clean and halve the strawberries. Sprinkle with 1 tablespoon of sugar and leave to stand.
