Ingredients

Servings: 4
  • 250 g Basmati rice
  • 7-10 Tbsp Salt
  • 1 ripe mango
  • 1/2 bunch Spring onions
  • 600 g Pork tenderloin
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Pepper
  • 2 TEASPOONS Curry Powder
  • 250 ml Vegetable broth
  • 250 g cooking cream (15% fat)

Directions

    Prepare rice in boiling salted water according to package instructions. Cut mango meat from the stone, peel and dice. Wash and clean spring onions and cut them diagonally into thin slices.

    Wash the meat, dab dry and cut into strips. Heat oil in a coated pan. Fry the meat for about 5 minutes while turning it, season with salt and pepper and remove.

    Put the mango pieces into the pan and fry them for about 3 minutes. Sprinkle with curry and sauté briefly. Deglaze with stock and cream and simmer for 6-8 minutes. After about 5 minutes add spring onions.

    Add the meat, season with salt and pepper. Arrange meat and rice.
