Peel and chop the onions. Heat the oil in a pot. Fry the onions in it until transparent. Add vegetables and broth and bring to the boil. Cover and cook for about 15 minutes. In the meantime, cut the sausage into cubes and add to the vegetables about 5 minutes before the end of the cooking time.
Dice bread and fry in hot fat until golden brown. Wash parsley and chop finely. Season vegetable soup with salt and pepper. Fold in parsley. Pour soup into a tureen and serve with the bread cubes
