Clean and wash the chicory and cut it into strips, except for 8 beautiful outer leaves. Clean lamb's lettuce, wash thoroughly several times and drain. Wash the apples, prick out the core and cut the apples into rings.
Dice gherkin and beetroot. Mix vinegar, salt and pepper. Finally, emulsify the oil. Add frozen herbs and gherkin. Mix beetroot and chicory strips with the vinaigrette.
Arrange apple slices, chicory leaves, lamb's lettuce and mortadella on 4 plates. Spread marinated salad on top and serve immediately.
