Wholemeal quiche with apple and leek

Ingredients

  • 225 g dark wheat flour
  • 7-10 Tbsp (Type 1050)
  • 150 g soft butter or
  • 7-10 Tbsp Margarine
  • 1 Egg yolk (size M)
  • 7-10 Tbsp Salt
  • 1 large leek (leek)
  • 3 Apples
  • 2 Eggs
  • 250 g Schmand
  • 7-10 Tbsp white pepper
  • 2 TABLESPOONS Sunflower seeds
  • 7-10 Tbsp Grease

Directions

    Quickly work the flour, fat, egg yolk and 1 pinch of salt into a smooth dough. Cover and chill for 30 minutes. In the meantime clean, wash and cut the leek into rings. Wash apples, remove core and cut into slices. Mix eggs and sour cream, season with salt and pepper. Roll out dough between 2 layers of cling film to a circle (approx. 28 cm Ø). Grease the pie dish (26 cm Ø) and line with dough. Add apple slices and leek. Sprinkle 1 tablespoon of sunflower seeds on top. Sprinkle with egg sour cream. Add the remaining seeds and bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for approx. 35 minutes
