White herring salad with apple & sausage

Ingredients

  • 2 Gherkins (glass)
  • 250 g Pork sausage
  • 500 g Bismarck herrings
  • 3 Stem(s) Parsley
  • 1 tart apple
  • 1 big onion
  • 2 TEASPOONS medium hot mustard
  • 3 TABLESPOONS Vinegar
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp salt, pepper
  • 2 TABLESPOONS Capers
  • 2 Eggs
  • 75 g streaky smoked bacon

Directions

    Cut the cucumbers into small cubes. Peel the skin off the sausage. Cut sausage into strips and herrings into pieces. Wash and chop parsley. Apple wash, quarter, core and cut into small pieces.

    Peel and finely grate the onion. Mix with mustard, vinegar and oil. Season with salt and pepper. Mix cucumber, sausage, fish, apple, parsley and capers with the marinade. Cover the salad and chill for about 1 hour.

    Boil the eggs hard for about 10 minutes. Quench, peel, cool. Dice bacon, fry crisply without additional fat, add to salad. Season to taste. Cut the eggs into slices and arrange them on the salad.

    Plus: brown bread.
