\"What the hack\"-mullet with melted cheese

Ingredients

  • 1⁄2 Glass (approx. 150 g) Danish cucumber salad
  • 3 Shallots
  • 4 TABLESPOONS Fruit vinegar
  • 3-4 Tbsp demerara sugar
  • 1–2 red chillies
  • 7-10 Tbsp Salt
  • 100 g Cheddar (piece)
  • 1 Garlic clove
  • 3 medium-sized onions
  • 600 g Minced beef
  • 4 TABLESPOONS Breadcrumbs
  • 1 Egg (Gr. M)
  • 2 TEASPOONS medium hot mustard
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil

Directions

    For the gherkin relish, drain the gherkins in a sieve, then chop them finely. Peel and finely chop the shallots. Boil up cucumbers, shallots, fruit vinegar and sugar in a small pot while stirring, boil down for about 10 minutes.

    Stir now and then. In the meantime clean and wash the chillies, cut them lengthwise in half, remove the seeds and chop them very finely. Season cucumber relish with chilli and salt.

    Grate cheddar for the meatballs. Peel garlic and chop finely. Mix cheese and garlic. Peel 1 onion and chop finely. Put the minced meat, diced onion, breadcrumbs, egg and mustard in a bowl, knead well.

    Season vigorously with salt and pepper. With moistened hands form approx. 4 mince flat cakes. Put each 1⁄4 of the cheese mix in the middle of the flat cake. Wrap the cheese core with the mince and press it well together so that the cheese does not run out during frying.

    Heat the oil in a large frying pan. Fry the meatballs in it at medium heat for 8-10 minutes on each side until crispy. Take them out, put them on a plate and keep them warm in the oven (approx. 50 °C).

    In the meantime cut the remaining 2 onions into thin rings. Fry the onion rings in the frying fat for about 5 minutes while stirring. Season with salt and pepper. Serve the meatballs with cucumber relish and onion rings.
