Bring water to the boil, add sausages and let them simmer at low heat for about 12 minutes. In the meantime wash and clean the lamb's lettuce. Wash and clean the radishes and cut into slices. Cut gherkins into slices.
Peel the onion and slice into fine rings. Mix vinegar and mustard, season with salt and pepper. Whip the oil into it. Wash the chives, dab dry and cut into rings. Drain sausage, rinse with cold water, peel and slice.
Mix lamb's lettuce, radishes, gherkins, onion rings, chives and sausage with the mustard dressing. Arrange the salad in a bowl and serve garnished with chives. Lye pastry tastes good with it.
