Cut the melon into slices. Cut the flesh first from the skin, then into strips, removing any seeds. Clean and wash the radishes and cut or slice them into thin slices. Wash mint, dab dry and cut into fine strips, except for a little garnish. Put melon, radishes and mint in a bowl. Halve 1 lime and squeeze it.
Season lime juice with pepper, salt and sugar, fold in oil. Mix the marinade carefully with the salad ingredients. Leave to stand for about 10 minutes. Arrange salad. Cut cheese into slices with a thin knife and crumble over them. Garnish with mint leaves and lime wedges
